Banana Nut Bread

Sugar In The Raw | Prep Time: 30 mins | Cook Time: 1 hr 20 mins | Makes 12 servings


1 ¾ cups unbleached flour (or 1 cup unbleached + ¾ cups whole wheat flour)
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup butter
2/3 cup Sugar In The Raw®
2 eggs
1 cup mashed, ripe bananas (2-3 medium)
1/2 cup chopped walnuts


Preheat oven to 350°F.

Sift together dry ingredients. In a large mixing bowl, cream butter; add Sugar In The Raw® and continue beating. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with bananas. Stir in chopped walnuts.

Pour batter into greased 9 x 5-inch loaf pan and bake at 350°F about 1 hour and 20 minutes or until knife inserted in center comes out clean. Let cool in pan 20 to 30 minutes before removing to rack.
