Banana Nut Bread
|1 ¾||cups unbleached flour (or 1 cup unbleached + ¾ cups whole wheat flour)|
|2||teaspoons baking powder|
|1/4||teaspoon baking soda|
|2/3||cup Sugar In The Raw®|
|1||cup mashed, ripe bananas (2-3 medium)|
|1/2||cup chopped walnuts|
Preheat oven to 350°F.
Sift together dry ingredients. In a large mixing bowl, cream butter; add Sugar In The Raw® and continue beating. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with bananas. Stir in chopped walnuts.
Pour batter into greased 9 x 5-inch loaf pan and bake at 350°F about 1 hour and 20 minutes or until knife inserted in center comes out clean. Let cool in pan 20 to 30 minutes before removing to rack.
Per Serving (¾ inch slice): 250 calories, 6 g protein, 10 g fat, 35 g carbohydrate, 60 mg cholesterol, 200 mg sodium.
