Cranberry-Pear Relish

Sugar In The Raw | Prep Time: 15 mins | Cook Time: 25 mins | Makes 4 cups


3 cups cranberries, fresh or frozen
1 ¼ cups Sugar In The Raw®
3/4 cup water
1 tablespoon minced fresh ginger
1 cinnamon stick, about 3 inches long
3 whole cloves
1 lb. firm Bosc of Anjou pears (about 3 medium) peeled, cored and roughly chopped


In a medium saucepan combine the cranberries, sugar, water, ginger, cinnamon stick and cloves. Bring to a boil over medium heat, stirring to dissolve the sugar. Cook until cranberries begin to pop, about 6 to 8 minutes.  Lower heat to simmer and add chopped pears. Continue to cook, stirring occasionally, until thickened, about 10 minutes.

Remove from heat and cool. Store, tightly covered, in refrigerator up to 1 month. Remove cinnamon stick before serving.
