Reduced-fat Balsamic Vinaigrette
|3||tablespoons golden raisins|
|1||cup boiling water|
|1/4||cup white balsamic vinegar|
|1||garlic clove, finely chopped|
|1||tablespoon Dijon-style mustard|
|2||tablespoons unsweetened apple sauce|
|2||teaspoons Agave In The Raw®|
|1||tablespoon extra virgin olive oil|
Place the raisins in a bowl. Add the boiling water and soak until the raisins are very soft, 20-30 minutes. Drain and place the soaked raisins in a blender.
Add the vinegar, garlic, mustard, apple sauce, Agave In The Raw®, and oil to the blender and whirl until the dressing is creamy and smooth. Season the dressing to taste with salt and pepper. Let the dressing sit for 20 minutes to allow flavors to meld. This dressing keeps, tightly covered in the refrigerator, for 3 days.
