|1||large egg white, at room temperature|
|3||tablespoons Stevia In The Raw® Baker’s Bag|
|2||tablespoons Sugar In The Raw®|
|2||teaspoons garam masala* (or 1 tsp ground cinnamon + 1 tsp ground cumin)|
|1/8||teaspoon ground black pepper|
|1/2||teaspoon kosher salt|
Preheat the oven to 350° F. Line a baking sheet with foil and coat the foil with cooking spray. Set the pan aside.
In a small, heavy saucepan, whisk the egg white until it is frothy. Add the Stevia In The Raw® Bakers Bag and Sugar In The Raw®, and 2 teaspoons of the spice mixture. Set the pot over medium-low heat and whisk constantly, 1-2 minute, until the mixture looks like creamy hot chocolate. Immediately pour the warm spice mixture over the nuts. Mix until the nuts are wet and evenly coated, 1 minute. Spread the coated nuts on the prepared baking sheet in an even layer.
Bake the nuts in the center of the oven for 10 minutes. Stir, separating any nuts that are stuck together. Bake for 2 minutes. Remove from oven and slide the foil with the nuts to a wire rack to cool completely. Store the spiced nuts in a tightly closed container for at least 8 hours before serving to allow the flavors to meld.
