Sweet & Savory Shortbread Wafers

Sugar In The Raw | Prep Time: 15 | Cook Time: 20 | Makes 20 wafers


1/2 cup butter, softened
1/4 cup grated, Parmesan cheese
3 tbs Sugar In The Raw, divided
1 cup all-purpose flour
1/4 tsp sea salt or kosher salt
1 tsp chopped fresh rosemary
2 tbs finely chopped crystalized ginger


In medium bowl, beat butter, cheese and 2 tablespoons of the Sugar In The Raw with electric mixer on medium speed until creamy. Add remaining ingredients except 1 tablespoon Sugar In The Raw. Mix on low speed until dough forms. Turn dough onto lightly floured work surface. Knead 4 or 5 time. Roll into 7-inch log. Wrap in plastic wrap and place in freezer 15 minutes or until firm enough to slice. Heat oven to 350°F. Cut log in 1/3-inch slices. Place on ungreased cookie sheet. Sprinkle with remaining 1 tablespoon Sugar In The Raw. Bake 14 to 16 minutes or until golden brown. Remove to cooling rack. Serve with a fresh fruit and cheese platter.
