- Preheat oven to 325℉.
- Place turkey breast skin-side up on a rack set in a roasting pan.
- In a small bowl stir together sugar, butter, bourbon, and 1½ teaspoons salt. Rub mixture all over turkey breast.
- In a large bowl toss apples, celery, onion, thyme, sage, rosemary, and garlic with oil, remaining ½ teaspoon salt, and pepper. Scatter vegetable-herb mixture under and around turkey breast.
- Roast, rotating the pan halfway through, until turkey is golden brown and internal temperature reaches 155℉, 1½ to 1¾ hours. Tent with foil and let rest for 15 minutes before carving.
