- Preheat oven to 400℉.
- In a medium pot over high heat bring wine, water, stevia, 1 tablespoon honey, cinnamon, and star anise to a boil. Reduce heat to low and add beets. Cover and simmer for 15-20 minutes or until beets are easily pierced with a fork. Strain beets and transfer to a bowl.
- While beets cook, brush one side of each slice of bread with olive oil and place on a sheet pan. Toast in preheated oven for 10 minutes.
- Spread toasts with cheese and top with beets, blueberries, and hazelnuts. Drizzle with remaining honey.
