DIRECTIONS
1. Preheat oven to 325 ̊F. Grease a 9×5” loaf pan.
2. To make streusel, in a medium bowl, stir to combine flour, sugar, nuts, and coconut. Drizzle melted butter over top, and stir with a fork until it resembles a crumb mixture.
3. To make banana bread, in a separate medium bowl, whisk to combine flour, baking powder, baking soda, and salt. In a large bowl, whisk to combine eggs and sugar, then stir in pineapple, mashed banana, oil, and vanilla.
4. Stir flour mixture into banana mixture, in three batches, just until combined. Pour into prepared loaf pan, top with streusel, and bake for 1 hour 25 minutes or until a toothpick inserted comes out clean.
Note: Make this recipe into muffins by greasing a 12-cup muffin tin with cooking spray. Preheat oven to 375 ̊F. Fill muffin cups two-thirds full with batter and top with streusel. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
