In a medium saucepan combine apple cider, water, Stevia In The Raw®, maple syrup, orange peel, cinnamon, anise, cloves, and maple extract. Heat gently over medium until steaming, then cover, reduce heat to low, and let steep for 30 minutes.
Remove from heat. Remove spices and orange peel. If desired, stir in bourbon. Divide toddy between mugs and garnish with apple slices, cinnamon sticks, and star anise.
