1. In a medium saucepan combine 2 cups water, pomegranate juice, 4 packets monk fruit, and cardamom. Simmer over medium heat for 5 minutes.
2. Take off heat and stir in vanilla. Refrigerate until chilled.
3. Place a small amount of water in a shallow dish or plate and sprinkle remaining 4 packets monk fruit on another plate. Dip the rims of 4 glasses in water and then in monk fruit. Add 51⁄2 oz (a scant 3⁄4 cup) pomegranate mixture to each glass. Top off each glass with 2oz sparkling water.
