We asked them the same four questions we ask every partner...
When people leave, what do you hope they’re saying?
Broadly, we want them to say that they felt at home, but that looks a little different for each of the four cafes. We've been intentional about trying to build a vibe at each that feels immersive and distinct to its immediate surroundings. For example, Airship at Coler is all about coffee in the woods; you're in the open air with no wi-fi, so we're trying to encourage a sense of tranquility that might be harder to find in a space where everyone has their laptops out. On the flip side of that, at a cafe like our 5th St. location, the home of our roastery, we want you to get a feel for our dedication to the ritual of coffee. Both can feel like home, but they're definitely singular experiences.
What’s something guests might not notice but you care deeply about?
Everything we do is because we love doing it. Every coffee we import and roast is sampled in the cupping lab ad nauseam and genuinely enjoyed. Each of our cafes came from the seedling of a coffee shop experience that we would like to have. Every Airship is off of a bike trail because we ourselves like riding bikes around... so on and so forth. One of our missions is to create spaces where authentic community can thrive, and if we were to become disconnected from our sensibilities on things we care about or like, we wouldn't be able to carry that out.
Where are you choosing to do less these days?
Less 'hustle'. Coffee, and by extension, cafes, often become tools to maximize productivity at any cost; more or less acting as a vehicle for caffeine. For us, a cup of coffee means we're slowing down for a moment to enjoy, not speeding up.Q: What should someone order on their first visit? One of our pourovers, or a Lumberjack latte.
