The Company We Keep
Colombian-born Steven Sutton launched Devoción in 2006 to produce the freshest coffee imaginable. Sourced from Colombia and roasted in Brooklyn, their coffee goes from origin to cup as fast as 10 days.

In Interview
We asked them the same four questions we ask every partner...
When people leave, what do you hope they’re saying?
"I didn't know coffee could taste like that!" We pride ourselves on our coffee freshness even before roasting, which results in a more flavorful, vibrant cup than any other cup you can get in the US. We love the look on our customers face when they try the first sip and notice the difference that fresh green coffee and of course freshly roasted coffee makes compared to the industry standard.
What’s something guests might not notice but you care deeply about?
Again, I would go back to our freshness. Freshness before roasting. Most specialty coffee is roasted 6 to 12 months after harvest. At Devoción, we fly our green coffee directly from Colombia and roast it just days after arrival, sometimes as little as 10 days after leaving origin. It's a level of freshness that's incredibly difficult to achieve, but it's what allows the natural sweetness and complexity of the coffee to shine.
Where are you choosing to do less these days?
Instead of chasing every trend in coffee (matcha! on tap!), we stay focused on what matters most: sourcing exceptional Colombian coffees, building long-term relationships with producers, and preserving freshness from origin to cup.
What should someone order on their first visit?
If you're a coffee person, either an espresso to taste the pure freshness of our coffee or a pour over of one of our limited edition experimental microlots. If coffee isn't your thing, try our Sparkling Cascara, a refreshing all-natural soda made from cold pressed coffee cherries, filled with antioxidants and ⅓ of the caffeine of a cup of coffee. Oh, and don't sleep on our signature Guava and Cheese croissant!
