Ingredients

  • 1 small butternut squash (~2 lbs), peeled and cubed
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup unsalted butter
  • 8–10 fresh sage leaves
  • 1–2 packets of Stevia In The Raw (to taste)

Preparation

  1. Step 1

    Preheat the oven to 400°F (200°C).

  2. Step 2

    Toss the squash cubes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25–30 minutes, until soft and golden.

  3. Step 3

    While the squash is roasting, make the sage brown butter: Melt the butter in a small skillet over medium heat. Add the sage leaves and cook until the butter turns golden brown and smells nutty (about 4–5 minutes).

  4. Step 4

    Remove from heat and stir in the stevia.

  5. Step 5

    Drizzle the sage brown butter over the roasted squash and toss gently. Serve warm.
