Monk Fruit with Erythritol - Golden

Ingredients

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • ½ cup butter, softened
  • ¾ cup Golden Monk Fruit In The Raw
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • 1 - 11oz container vanilla frosting
  • Orange food coloring

Preparation

  1. Step 1

    Preheat oven to 350°F (175°C). Line baking sheet with parchment.

  2. Step 2

    In a bowl, mix the butter and Golden Monk Fruit In The Raw until fluffy. Add egg and vanilla, beat to combine.

  3. Step 3

    In another bowl, whisk flour, cocoa, baking powder, salt. Add dry to wet ingredients, mix until dough forms.

  4. Step 4

    Scoop teaspoon-sized balls, flatten slightly. Bake 8–10 minutes. Cool completely.

  5. Step 5

    For frosting: Beat frosting until creamy. Add desired amount of orange food coloring and continue to whip until it’s fully incorporated.

  6. Step 6

    Spread or pipe frosting between two cookies to sandwich.
