Turbinado Cane Sugar, Organic Cane Sugar

Ingredients

  • 1 cup water
  • 1/4 cup unsalted butter
  • 3 tablespoons Classic Monk Fruit In The Raw
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • Neutral oil, for frying
  • 1/2 cup Sugar In The Raw, lightly ground
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped dark chocolate
  • 1/3 cup coconut milk (or heavy cream)
  • Pinch of sea salt

Preparation

  1. Step 1

    In a saucepan, combine water, butter, Monk Fruit In The Raw, and salt. Bring to a simmer.

  2. Step 2

    Stir in flour all at once until a dough forms. Remove from heat and let cool slightly.

  3. Step 3

    Beat in eggs one at a time until dough is smooth and glossy.

  4. Step 4

    Heat oil to 350°F. Pipe 1- to 2-inch pieces of dough into hot oil and fry until golden brown. Drain on paper towels.

  5. Step 5

    While warm, toss churros in cinnamon-Sugar In The Raw mixture.

  6. Step 6

    For the chocolate sauce, heat coconut milk and stir in chocolate until melted. Add Monk Fruit In The Raw and salt; whisk until smooth.

  7. Step 7

    Serve churro bites warm with the dipping sauce.
