Ingredients
- All-purpose flour, 1 ½ cups
- Unsweetened cocoa powder, ½ cup
- Baking soda, 1 teaspoon
- Baking powder, ½ teaspoon
- Salt, ½ teaspoon
- Sugar In The Raw, ¾ cup and ½ cup (blended into a fine powder)
- Unsalted butter, ½ cup (melted)
- Buttermilk, ½ cup (or plant-based milk + 1 teaspoon vinegar)
- Eggs, 2 large
- Vanilla extract, 1 teaspoon
- Hot coffee or hot water, ½ cup (enhances chocolate flavor)
- Cream cheese, 8 ounces (softened)
- Unsalted butter, ½ cup (softened)
- Vanilla extract, 1 teaspoon
- Green food coloring, as needed
- Pinch of salt
- Green sprinkles (for decoration)
Preparation
- Step 1
Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.

In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and Sugar In The Raw.

In a separate bowl, whisk melted butter, buttermilk, eggs, and vanilla extract until combined.

Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Stir in the hot coffee or hot water, mixing until smooth.

Divide the batter evenly into cupcake liners, filling each about ¾ full. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.

To prepare the frosting, beat cream cheese and butter until fluffy. Add powdered Sugar In The Raw, vanilla extract, and salt, then mix in green food coloring until the desired shade is achieved.
- Step 7
Pipe or spread the frosting onto the cooled cupcakes. Top with green sprinkles for a festive touch.
