Peach Galette

Stevia Sweetener Blend, Monk Fruit with Maltodextrin
Ingredients
• 1 sheet puff pastry, thawed
• 3 ripe peaches, thinly sliced
• 1 ½ tablespoons powdered Stevia In The Raw (adjust according to taste)
• 1 teaspoon lemon juice
• 1 teaspoon vanilla extract
• 1 tablespoon cornstarch (to thicken the peach mixture)
• 1 egg (for egg wash)
• 2-3 tablespoons apricot jam (for glazing)
• Optional: 1 tablespoon melted butter for brushing and a sprinkle of Monk Fruit In The Raw for a golden finish
Preparation
- Step 1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2
On a lightly floured surface, roll out the puff pastry to slightly thin it out. Use a cookie cutter or glass (around 4-5 inches in diameter) to cut out circles from the dough. You should get 6-8 circles.
- Step 3
In a mixing bowl, combine the sliced peaches, powdered Stevia In The Raw, lemon juice, vanilla extract, and cornstarch. Toss everything together gently until the peaches are evenly coated.
- Step 4
Place the puff pastry circles on the prepared baking sheet. Spoon a small amount of the peach mixture onto the center of each pastry circle, leaving about 1 inch of border around the edges. Gently fold the edges of the pastry up and over the filling, pleating as you go. The center of the galette should remain exposed.
- Step 5
Beat the egg in a small bowl and brush the edges of the pastry with the egg wash. This will help give the galettes a golden color.
- Step 6
Brush the exposed peaches with a little melted butter and sprinkle with a tiny bit of Monk Fruit In The Raw if desired.
- Step 7
Bake the galettes for 20-25 minutes, or until the pastry is golden and crisp, and the peaches are tender.
- Step 8
While the galettes are baking, gently warm the apricot jam in a small saucepan or microwave until it becomes slightly runny. Once the galettes are out of the oven and still warm, brush the peach slices with the apricot jam for a glossy finish.
- Step 9
Let the galettes cool slightly before serving. These are delicious warm or at room temperature.
