Ingredients

Dough

  • 1 lb pizza dough (store-bought or homemade), room temperature

Pistachio Cream

  • ½ cup shelled pistachios (unsalted)
  • ¼ cup heavy cream
  • 2 tbsp olive oil
  • 2–3 tbsp Sugar In The Raw (to taste)
  • Pinch of salt

Toppings

  • 6–8 oz fresh mozzarella, torn or sliced
  • ¼ cup chopped pistachios

Optional finishes:

  • Powdered sugar
  • Honey In The Raw or Agave In The Raw drizzle
  • resh ricotta
  • Orange zest

Preparation

  1. Step 1

    Make the pistachio cream:

    • In a food processor, blend pistachios until finely ground.
    • Add cream, olive oil, sugar, and salt.
    • Blend until smooth and spreadable. Taste and adjust sweetness.
  2. Step 2

    Prep the oven:

    • Preheat oven to 475–500°F (or as hot as your oven goes).
    • Place a pizza stone or baking sheet inside to heat.
  3. Step 3

    Shape the dough:

    • Stretch dough into a 10–12 inch round on parchment paper.
  4. Step 4

    Assemble:

    • Spread pistachio cream evenly over the dough, leaving a small border.
    • Top with mozzarella.
  5. Step 5

    Bake:

    • Transfer pizza (on parchment) to the hot stone or pan.
    • Bake 8–12 minutes, until crust is puffed and golden and cheese is just melted.
  6. Step 6

    Finish

    • Remove from oven and sprinkle with chopped pistachios.
    • Finish with powdered sugar, a drizzle of honey/agave, or dollops of ricotta if desired.
  7. Step 7

    Serve:

    • Slice and serve warm.
