Roasted Carrots

Ingredients
- 1 lb carrots, peeled and cut into sticks
- 2 tbsp olive oil
- ¼ cup balsamic vinegar
- 2 tbsp Monk Fruit In The Raw
- 1 tbsp fresh thyme leaves
- ¼ tsp salt
- ¼ tsp black pepper
Preparation
- Step 1
Preheat the oven to 375°F (190°C).
- Step 2
Toss the carrots with olive oil, salt, and pepper.
- Step 3
Arrange on a baking sheet.
- Step 4
Roast for 20 minutes.
- Step 5
Meanwhile, whisk together balsamic vinegar and Monk Fruit In The Raw in a small bowl.
- Step 6
After 20 minutes, drizzle the carrots with the balsamic glaze and sprinkle with thyme leaves. Roast for an additional 10 minutes until caramelized and tender.
