Teriyaki Stirfry

Ingredients
- 1 head broccoli, cut into florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, julienned
- 1 zucchini, sliced
- 1 onion, sliced
- 1 block tofu or chicken breast (optional)
- ¼ cup low-sodium soy sauce or tamari
- 2 tbsp Stevia In The Raw
- 1 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp corn starch or arrow root powder
- 1 tsp minced garlic
- 1 tsp grated fresh ginger
- 1 tbsp olive oil or avocado oil (for stir-frying)
- Sesame seeds and green onions (for garnish)
Preparation
- Step 1
In a small bowl, mix soy sauce, Stevia In The Raw, rice vinegar, sesame oil, garlic, and ginger. Dissolve cornstarch in 2 tbsp of water and add to the sauce. Set aside.
- Step 2
Heat olive oil in a large skillet or wok over medium-high heat. Add onion, broccoli, bell peppers, carrots, and zucchini. Stir-fry until vegetables are tender and crisp, about 5–7 minutes.
- Step 3
If using tofu or chicken, cook separately and add to the vegetables.
- Step 4
Pour the teriyaki sauce over the stir-fried vegetables. Stir until the sauce thickens and coats the vegetables evenly.
- Step 5
Serve warm, garnished with sesame seeds and green onions.
