Ingredients

  • 1 lb radishes, halved, sliced or quartered
  • 1 tbsp olive oil
  • 1 tbsp Organic Agave In The Raw or Organic Hot Avage In The Raw
  • 1 tsp salt, plus more
  • 1/2 tsp black pepper, plus more
  • 2 tsp lemon juice, separated
  • 3 sprigs + 1 tbsp fresh thyme, separated
  • 4 tbsp butter, softened
  • 1 garlic clove, grated
  • Zest of 1 lemon

Preparation

  1. Step 1

    Preheat the oven to 450°F.

  2. Step 2

    Toss radishes with olive oil, Organic Agave In The Raw, 1 tsp lemon juice, salt, and pepper. Spread on a baking sheet and top with three whole sprigs of thyme.

  3. Step 3

    Roast for 30-35 minutes, stirring halfway through, until radishes are tender and slightly caramelized.

  4. Step 4

    Meanwhile, mix together butter, 1 tbsp finely chopped thyme, garlic, remaining lemon juice, lemon zest, salt, and pepper to taste. Set aside.

  5. Step 5

    Serve roasted radishes with compound butter on the side or top with butter for a shareable side dish.
