Agave Roasted Radish

Ingredients
- 1 lb radishes, halved, sliced or quartered
- 1 tbsp olive oil
- 1 tbsp Organic Agave In The Raw or Organic Hot Avage In The Raw
- 1 tsp salt, plus more
- 1/2 tsp black pepper, plus more
- 2 tsp lemon juice, separated
- 3 sprigs + 1 tbsp fresh thyme, separated
- 4 tbsp butter, softened
- 1 garlic clove, grated
- Zest of 1 lemon
Preparation
- Step 1
Preheat the oven to 450°F.
- Step 2
Toss radishes with olive oil, Organic Agave In The Raw, 1 tsp lemon juice, salt, and pepper. Spread on a baking sheet and top with three whole sprigs of thyme.
- Step 3
Roast for 30-35 minutes, stirring halfway through, until radishes are tender and slightly caramelized.
- Step 4
Meanwhile, mix together butter, 1 tbsp finely chopped thyme, garlic, remaining lemon juice, lemon zest, salt, and pepper to taste. Set aside.
- Step 5
Serve roasted radishes with compound butter on the side or top with butter for a shareable side dish.
