Carrot Tart w/Feta and agave

Ingredients
- 8 oz feta cheese, divided
- 1 garlic clove
- 1 tsp flaky salt, plus more
- 1/4 cup olive oil, plus more
- 1/2 tsp freshly ground black pepper
- tbsp Organic Agave In The Raw, plus more
- 1 sheet puff pastry, thawed
- 1 bunch rainbow carrots, washed and sliced into strips
- 2 tbsp olive oil
- 1 tbsp tender herbs, like dill or parsley, chopped
Preparation
- Step 1
Preheat the oven to 400°F.
- Step 2
In a small blender, combine 6 oz feta, garlic, salt, pepper, olive oil, and Organic Agave In The Raw. Blend until smooth.
- Step 3
Drizzle olive oil into a cast-iron skillet or small sheet pan. Roll out puff pastry to fit the cooking vessel.
- Step 4
Pour whipped feta sauce onto the pastry and smooth it in an even layer.
- Step 5
Spread carrots evenly over the pastry, leaving a 1/2-inch border. Sprinkle with remaining feta and more Organic Agave In The Raw. Season with salt.
- Step 6
Fold edges over carrots to form a crust and brush with egg wash. Bake for 35-40 minutes, until golden and crisp.
- Step 7
Garnish with tender herbs and serve warm.
